Every now and then a unique set of circumstances arise where beautiful dry botrytis forms in plots of Riesling. In 2017 we found such a parcel in the South Okanagan and couldn’t resist crafting something special from this fruit.
This wine is the result of 16 hours of hand sorting and using only the dry botrytis affected grapes. Macerated on skins for three days, with gentle daily pigéage. Fermentation took place in stainless steel at cool temperatures, over three weeks. Once racked and filtered the wine was bottled into 375mL and entered its cellar slumber.
We purposefully tucked this wine away in the cellar for a handful of years in order to coax the rewarding and delicious secondary characteristics TBA is known for.
The wine opens with aromas of lemon, spiced apricot and honey. On the palate, a medley of citrus and orchard fruits charm with an intensely concentrated core. Opulent and rich, but with no shortage of acidity to balance and add length. Cellar comfortably for 10 plus years, open and enjoy with all things decadent or simply savour on its own.
