Tantalus winemaker David Paterson has just been named “One to Watch” by Maclean’s in their annual “Wine in Canada” publication – a cross-Canada, behind-the-scenes look at what’s happening in the Canadian wine industry.
“Paterson wants to raise the bar on another cool-weather varietal, pinot noir. He uses Tantalus’s highly tuned commitment to environmental sustainability to great advantage. Rather than sterilizing the landscape with chemicals and pesticides, he wants the notoriously fickle grape to soak up the terroir.”
“I want to see lots of earth worms. I want my grapes covered in spiders and earwigs and all sorts of stuff like that-a healthy ecosystem, rather than a barren wasteland that just grows grapes.”
