Celebrating the spirit of experimentation each year, our Riesling Lab has emerged as a fun opportunity for our cellar crew to geek out over our beloved variety.
Golden in the glass, the 2025 Riesling Lab opens with expressive aromas of white tea, fuzzy peach, lychee, and dried flowers. Notes of pineapple and coconut weave through the bouquet, alongside delicate bergamot and a subtle hint of mint. The palate is richly textured and viscous, offering a lush and generous profile balanced by lively acidity. A touch of sweetness carries through to a long, quietly persistent finish.
WINEMAKER'S NOTES:
The 2025 Riesling Lab once again leans into experimentation, focusing on the character of our estate Riesling hard pressings. These press fractions were given brief exposure to oxygen before fermentation, then gently protected to preserve balance and texture.
Fermentations were carried out using both wild and selected yeasts. The majority of the wine was fermented in stainless steel using a solera-style approach, allowing successive press lots to build complexity and continuity in the blend. A smaller portion was fermented in neutral Chardonnay barrels, contributing additional depth and structure to the final wine. The result is a Riesling Lab that highlights texture, aromatic intrigue, and the more generous side of the variety—an experimental bottling crafted by the 2025 vintage team: Sam, Nick, and Ashley.
